Cornish Ginger Fairings

12 oz Self-raising Flour
4 oz Margarine
8 oz Sugar
4 tsp Ground ginger
2 tsp Bicarbonate of Soda
2 tbsp Boiling water
4 tbsp Golden Syrup
Turn oven on at 350°F (about 180°C)
1. Rub fat into flour.
2. Add sugar and ginger.
3. Dissolve bicarbonate of soda in boiling water and golden syrup,
and add to mixture.
4. Mix all well together.
5. Roll into compact balls, walnut size.
6. Place on greased tray, allowing plenty of room to spread.
7. Cook 12 minutes in top of oven, then 5 minutes in middle of oven
(to flop and crack) - Timing is critical!
8. Cool on tray 3-4 minutes, then on rack.
Store in air-tight container.
Tip: Start first 12 minutes with 1 tray and then alternate 2.
