Cornish Ginger Fairings
4 oz (110g) Plain Flour
2 oz (50g) Butter
2 tbsp Golden Syrup
¼ tsp Salt
2 oz (50g) Sugar
1 tspn (level) Baking Powder
1 tspn (level) Ground Ginger
1 tspn (level) Bicarb. of Soda
1 tspn (level) Ground Cinnamon
1 tspn (level) Mixed Spice
Mix all the dry ingredients except the sugar. Rub in the fat, add the sugar.
Heat the syrup until it runs and add to the mixture. Roll into balls the size
of a walnut and place on a greased tin on top shelf of a fairly hot oven -
375°F (190°C) Reg 5.
When the biscuits begin to colour, remove to a lower shelf where they will flop and crack.
