Cornish Heavy Cake


 6 oz (75g)	Plain Flour
 3 oz (75g)	Lard
 1 ½ oz (40g)	Sugar
 3 oz (75g)	Currants
 ¼ tspn 	Salt
 1-2 oz (25-50g) Peel, if liked
 approx. 2 tbsp milk or water to mix


Mix the flour, salt and sugar roughly together. Add the other ingredients and 
mix with the milk or water to make a stiff dough. Roll to approx ½" thick. 
Criss-cross with a knife. Bake on greased backing sheet at 375°F (190°C)
 Reg 5 for 25-30 minutes.
